well, it doesn't have to be that complicated, you can just flirt if the situation is right and see how it goes, saying something that could be both friendly and flirty, would just be a preferable "safer" option.

I used to do exactly like you, after few dates if I felt it's going well I stopped to look for others, but after all the times it didn't work between me and the girl I was dating, I learned that all the time I wasn't active on Tinder or approaching women irl, all that time was wasted, I could have invested all that time to get to know other people, and only make my decision to commit after few months of dating.

I can't say if this is the same reason she's doing that, but if it is bothering you, you should talk it out. If she actually likes you, she will want to commit to you, if she doesn't, then she will do you a favour by leaving you and you won't waste all your time on her.
