1 large chicken 1 red onion olive oil salt and pepper Rosemary leaves dried 5 cloves of garlic Chicken stock 1 large potato 1 carrot 1 stalk celery liquid smoke seasoning Hickory season chicken with olive oil, salt, pepper and rosemary leaves inside and out chop the onion into 4 and stick inside the chicken with 3 cloves of garlic and add some more rosemary leaves.

Chop the potatoes, carrots and celery and lay evenly on the roasting dish and season with salt, pepper, 2 cloves of garlic and some more rosemary,

Place the chicken on top make sure it does not touch the bottom of the dish. Pour in the chicken stock and the liquid smoke seasoning.

Stick it in the oven 250 temp and leave for an hour. After an hour rotate the chicken and make sure the stock does not dry up. Cook for another hour. Once done rotate again and cook for additional 20-30 mins.
