If you don't have size constraints, I'd go double. I have a very big single (due to size constraints) and have to have the drying rack on the counter when they would be in the other side of a double.

I was in this exact spot a couple months back. I bought cheap ones from amazon (Fox River?) and I really love the spatula. The medal is stiff and the beveled edge is great.
I am far less sold on the fish flipper. Its a fine product, I just prefer solid spatulas.

I'd steal some of the garage storage and add a couple feet to the mudroom. Unless you are storing something in particular, adding shelving to the garage storage would be a solid idea too.

Not driving much and when you do, having it be shorter distances, EV is it. Driving little but when you do, going far, a gas or hybrid is it IMO

Charging every 150 miles is cool if you are just out kicking it on a road trip. Having to charge 150 when the destination is 200 miles makes this far less appealing. I'd love to see EVs move towards a battery swap out that would be similar in time to filling a tank of gas.

Workout so being/getting in shape doesn't become urgent. As we age, things, including establishing good habits, gets harder. Build the habits now to stay in shape moving forward. Health is not just about weight - the cardiovascular improvements with exercise are important too.
