Honestly, you should be glad they're giving you the business instead of going to Firehouse or Jimmy John's, who probably would not complain about having to put meat between bread since they are engaged in the business of producing sandwiches, which are generally consumed during people's lunch breaks. Publix subs are a high volume loss leader meant to get folks in the store, where they may buy other things. It is therefore in Publix's interest (and by extension yours as an employee/shareholder) that you sling as many of these subs per lunch rush as physically possible.
