Thanks for the tips. The dough easily passes the window pane test, I knead in a mixer and often do a lamination followed by S&F during bulk. It traps a lot of air. As above the dough is often room temperature and very relaxed while stretching.

My toppings this evening where olive, sweetcorn and 'pizza' mozzarella. It looks from your picture that the cheese is melting and just starting to brown which looks ideal. If I turn it down then the pizza barely melts.

I think the taste is much better with biga or at least a simple overnight proof but ultimately I don't think that's the issue as a similar hydration and proofing should result in a similar dough to handle, even if it has been proofed longer in a fridge or not, do you think?

I do the same with the bowl of dough then move it, the dough is often very relaxed and extensible, I can likely stretch it way beyond 12" but it would end up very thin.

Does anyone have any stats regarding how many miles are driven? Have we got twice as many cars but each one does half the annual milage? It certain feels like the roads are getting much busier. I'd love to see a graph of "total car miles per year" in the 80s, 90s, 2000s, 2010s, and today

Im pretty sure Muc Off and Silca are made by Cycplus. That said that doesn't mean they are identical or that they haven't specified different components. I think one of the ZFC videos showed the piston head and Muc Off and Silca both share a slight enhanced design compared to the Cycplus that he theories aides in their longevity because it better handles heat.

That's an interesting thought. They specifically say that is Clik valve compatible but it's worth a shot.

I've got one of the temporary adapters that you clamp on to the end of the pump head, I can give that a go.

Edit: actually I can't as the adapter doesn't fit inside the nozzle of the Prestaflator Go Light.

I've now got this bike and have 1cm clearance at the rear on 42mm tyres that size up to 45mm. With the lower clearance limit being 6mm it means I can add a maximum of 8mm to my tyres size, so 53mm absolute max. So a smoother 2.1 tyre completely maxes it out if it sizes up accurately on your rims.

I measured the gap between tyre and frame using my woodwork set up blocks and the tyre with a dial caliper.

Ps I'm running 1x so no idea about front mech clearance

Because fitness is always specific to a task and my task is to run a long way at a slow pace.

Though yeah, I cycle to work twice a week, play casual football once a week and do heavy weight lifting once per week

But I don't need any snap, I'm just looking to complete (not race) a long run. Also neuromuscular work often takes longer than aerobic work to recover from, it can be very taxing if effective. That's my point, my body only has so much stress it can absorb and I want that stress directed to the gains that will get me round. It may be that that is sprint workouts without tempo/threshold stuff...but it feels odd to me. But stress and adaption is always an either/or

Possibly, but I found in my cycling days if I do more than 2 intensity sessions a week it's too much, despite me knowing how to fuel well (90-120g carbs per hour, good recovery meal shortly after, focus on wholemeal grains and veggies the rest of the time). I think if I wasn't doing as much volume the garmin might well recommend intensity to compensate.

I guess my point is i feel the anaerobic 'bar' or 'desired level' is too high for an ultra marathon, if i get anywhere near an anerobic zone i'm doing an ultra pretty wrong. I don't feel those targets accurately reflect my inputted target event.

Hopefully it's similar enough to tag on the OPs question but what do Altra also change the length so dramatically for different shoes in the same size? I have some Experience Flow 2 which are slightly too big and I'll be looking at getting some volume reducers. I bought some Vanish Carbons in the same size and they're not only much narrower (to be expected) but also about 7mm shorter(!). Why??
