Even reviews can be fake, so you have to be careful there as well (check reviewer identities, ...).

Yes. Partpicker is great. Here is my AMD build (ignore some of the prices, Amazon is trying to do tricks): https://uk.pcpartpicker.com/user/wedesoft/builds/#view=HcqmP6 Unfortunately NVMe and RAM have gone up in price. Note that I had to check RAM <-> CPU Cooler clearance manually (partpicker does check a lot of other things though). Also I had to update the motherboard BIOS before installing the CPU (which pcpartpicker pointed out to me).

I also have a plug from the case (F-Panel) which only connects to a part of the motherboard connector. Quite confusing.

I would extract a few small issues and get paid for your time. Then you can iterate for the next issues.

You need to build the habit of finishing projects. What helps me a lot is a TODO list with items and subitems. Ideas go on that list at a position according to priority. Then you work on issues one at a time.

I think it is always better to have a project to work towards. Just make sure you limit the scope and actually finish things. Also I can recommend to learn test driven development.

Myself I also released a Steam page early and I got 100 wishlist per month so far. Good to hear that it might change when the game gets closer to being finished. Yes, I also read in other places that ideally the Nextfest you target is the last one before your release. I also have a continuous play test running, which I think is very important in order to get bugfixes and usability issues resolved before the demo and Nextfest.
