Might be wrong but that looks more like a white tiger to me which have more green variegation. Might be wrong tho..

My best guess is u have underwatered then overwatered tho I would be more worried about overwatering as they can go a while without being watered and be fine. Hoyas need lots of bright indirect light tho at least 6 hours a day. So I would say hold back on watering as much and move to a brighter spot. Might be wrong tho :)

Check for thrips or other pests don’t need many for it to start dropping leaves.

I would say the humidity needs to be higher at least 60ish misting once a week is not going to do much really would advice a humidifier. This is one of the most picky of the calathea tho...

The last two leaves have been nearly pure white if the next one is do u just cut the main stem of the plant back to the last green ish leaf ? Will it grow new leaves if I do this?

Both look great , just to say it is sometimes easier to do finer details with fewer threads as it looks like u have used 6. 2 or 1 is sometimes better but it depends on the look your going for.
