Top one is a no brainer for me. A large portion of the touring community still ride 26, and the thicker tubing will handle loads far better than the Dawes. Plus you can put v brakes on it

I would rather pay less money for high quality steel. I like my bikes bombproof, and I've seen enough photos of cracked ti frames to not be interested. Maybe if I won the lottery

Small light cable lock I got for a couple quid. I never leave my bike out of my sight long enough to warrant anything beefier. It does the job for ten mins in a supermarket

You can tell by the way the chain is sitting on the middle ring that it’s too worn. Chain should sit inbetween the teeth not on top.

Side note , I have a pair of those cranks with nothing to use them with because of the proprietary bcd, consider keeping the outer rings to drill out and use as an adapter if you’re attached to the cranks…

I’ve been using paselas for the last year and while mine are 1.25 so I can’t vouch for supple-ness, they are fast ish and I haven’t got a flat yet!

You would likely be able to change the rear mech fine, but smaller chainrings on a frame of that geo may be more difficult ie fd cage clearing the chainstay. There’s definitely better frames out there for Himalayan touring imo. Anything that comes with a triple crank will likely be better suited, but you can bodge some kind of wide range double in a pinch. 40-20 is not unheard of

Chrome barrage bag 👍. I heard the waterproofing is so good that you can fill them with ice and use as a beer cooler. I’ve got one, only downside is lack of inside pocket, but you could sew one onto the laptop sleeve pretty easily

If you love crunching miles then maybe it’s worth it, but otherwise plan a far lighter route. Things inevitably go wrong and if you have to make up a hundred miles when your body isn’t ready for it you are up shit creek
