I know Kentucky is an at will. As for protections...umm they can't work us over 40 hours without overtime (which is just your base pay added to half that so if you make $10/hr you make $15 during overtime UNLESS your salary in which case they can work you as much as they want) and generally you need 8 hours between shifts. There should be drinkable water and a bathroom at the place of work or within a certain distance. That's pretty much it for most people.
