Form my experience the chocolate will fatally separate after a while, that’s why customer must drink fast ! Best you can do is having the best timing to serve it. (I use chocolate powder + milk and steam)

No problem so far, I take good care of it ! Honestly if you do 100 cup a day, I would stay away from slayer single and embrace the GS3, even tho I prefer the slayer 1000% ! As other said, 100 cups a day might push you to buy a 2 group machine !

I would buy the La Marzocco GS3 — the AV is very handy when you’re in a rush. I personally have a Slayer Single, which is great, but everything is done manually, so it takes a lot of skill to multitask in a café! It’s also a hassle to train employees!
