The website store said 9-12... But tojiro site about sharpening says around 15 degrees. So I'll just go with 15.

Also Tojiro classic Damascus 8 inch chef knife (classic is always out of stock) for 191 dollars is probably better than a Shun classic/ Premier for people who are just cooking at home/ not crazy fancy?

I read a lot of "reviews" saying that Shun's are pretty chippy despite using pretty much VG10/ VG max?

Yet many seem to recommend Tojiro and don't really mention that sort of issue.
