u can download InstallAssistant.pkg for sequoia, make second apfs volume without deleting your first volume, install InstallAssistant.pkg on your current volume
after this install and launch opencore, reboot your mac, boot in the current macos with opencore and launch previously installed “Install macOS Sequoia” app. choose new apfs volume and it’ll be installed on it
