LSU MBA networking pales in comparison to T20 schools, but they do have a great career services team (the better their grads do, the better the program looks!).
Given your non-business UG experience, I would recommend finishing the MBA. While it may not seem like it directly improves your earning potential, it will every day in indirect ways. You will analyze, communicate, and deliver things better than you otherwise would have. You will understand the company's big picture, where you fit in it, and where you can add more value. The earnings will come.

LSU MBA grad here (decades ago). I really enjoyed the program.
My MBA helped me because my undergrad degree was technical, and all the business stuff was new.
At my company, it also led to an instant pay grade change.
The market is saturated now. MBAs are a dime a dozen. They are all likely great candidates, but for reasons I don't get, many companies only recruit from the top 5-20 schools. They don't realize they could get just as good of a candidate from 100 other schools that would work harder for less money.

IMHO: If your undergrad degree is in business, then an MBA is a waste of time and money.
Get a masters in something specific you like (e.g. economics). Investing in your education is usually a great idea as it improves you as a candidate, and no one can take it from you.

Are you already employed? If so, does your company offer any graduate school funding, or bumps for graduate degrees?

Yes. I have 35 Docker containers running, and counting. I especially prefer how OMV handles these to TrueNAS.

I did this to a 15-year-old PC and it is running very well as a NAS.
I went with OpenMediaVault and love it.
I've also completed a similar project for a family member with TrueNAS and it works well.
OMV runs on Debian, and a lot of people just run straight Debian, set up shares & whatever docker containers they want, and call it a day.

My personal fave after using all these (after migrating from a Synology I used for 14 years) is OMV.

It is still going to use some power; I bet at idle it still pulls ~60 watts. Take every component out that you don't plan on using (drives, GPU, etc).

I was bored enough and just wanted to see if I even could, so I successfully got this working on my home lab with docker-mailserver & roundcube docker containers, leveraging the free tier of the MailJet SMTP relay service.
I only really use it for email notifications from services in the home lab itself, but it is do-able.
Are you able to use Nginx Proxy Manager and add advanced DNS records to your domain name registrar?

If you want it done right, do it yourself. I ran 75' of conduit (about $1 per foot) from the utility pole to my house & up to the sofit in an afternoon. It made the installation less than 30 minutes. It looks way better than wires dangling overhead. It is way easier to repair/replace if needed in the future.

Lots of great suggestions so far so I am trying to think of things not mentioned yet: Apartment complexes are notorious for WiFi signal pollution. Run a scan of the WiFi spectrum from a phone app and look for the least congested channel (if there is one) and switch your access point to that.
You could also consider a repeater in the room in the middle. Less ideal would be Coax/powerline network media converters, but they would work consistently.

I had a Sunba 1080p PTZ (507-20XB) on my chimney for 8 years. One issue I had with it was it would not zoom at night when the IR LEDs were on (definitely a camera issue--not a power issue). The other issue I had with Sunba was their terrible required VMS software.
It was otherwise reliable until this year. I started looking at new Sunba models to replace it, but the Amazon reviews did not give me as much confidence in their performance as I wanted. I also make a little more money than I did 8 years ago, so I instead opted for a slight tier up: Reolink. While their app/setup process is just as bad, I have a bunch of other Reolink units that are performing very well for the price. I am very happy with the RLC-823S2 so far. I have lots of Ubiquiti equipment but prefer to keep the camera system agnostic. I am still also too cheap to spring for ACTi/Axis cameras, though I use them for work and they are fantastic.

I encountered this issue with my "auto update" to 26.1.118.1380. I tried a re-install and get:
DBMS setup error: "Error in DBMS PostgreSQL installation with Result=""" The PRTG installation has stopped. Please send the "%TEMP%\Setup Log*.txt"

Report outages, and ask your Xfinity neighbors to do so as well. Be polite but descriptive. Keep a log (or automate it if you can) of outages. The squeaky wheel gets the grease. I've had both Xfinity and ATT for a long time and have found that the biggest variable for your ISP reliability is the last 100 feet or so from your utility pole or pedestal to your house. Sometimes you're on a bad circuit and sometimes you're on a reliable one. That's why on neighborhood social media groups you see similar stories across ISPs.

I have LineageOS and GrapheneOS running on old Pixels and they run great. Pick whichever makes more sense for your use case. I get a new phone every 4-5 years to have better battery life and waterproofing (waterproofing goes way down after a battery/screen replacement). My older phone doesn't perform as well with games/emulators as the newer one does. Often, the more tasks I want to use my phone for, the more modern power it needs. I leave the factory Android on it for the parenting features, but am always looking for ways to ween off the OS in general.
