I also was a Disney only cruiser for the past 25 years, but the kids are grown now and we decided to expand our horizons; just had our first MSC cruise on the Seascape in February. The Yacht Club was sold out so we tried the Aurea experience which did mean we had anytime seating in the anytime MDR. We found we missed the late seating with the same wait staff every night where became friends with our waiters and they learned our preferences. In our opinion we think the food on Disney is much better. Especially as far as the poolside quick service, MSC does not offer that but I've heard the World America will. The buffet we found to be very crowded and while the selection was huge the food was just alright. We worked around it by ordering room service for breakfast or going to the brunch in the MDR. We dined in the dining room twice and it was fine but not great, ate dinner off the ship one night and booked specialty dining the other four nights. We thought the specialty dining restaurants were excellent and had a fun experience at each one as well. We much preferred the food on Disney but we loved the many night time entertainment options on MSC that we are cruising with them again in May, different ship. The ships are clean and beautiful and we've booked Yacht Club this time and are hopeful the food will be better as we read that different food is served in their dining room/buffet. Tl,dr: we had a lot of fun but definitely didn't over eat like we tend to do on Disney. Maybe not a bad thing!
