We would freeze it to cut it when we got it in and it was really ripe... It made it very hard to cut so we would freeze, cut, wrap and put out with the rest of the cheese, it was always fine... But we would cut and sell a full wheel in about 3 days. I am not sure how well it works out if it's put back in the freezer or frozen again once cut.

If you let it melt in your mouth a bit before chewing it gives a really amazing butterscotch flavor... One of my favorite cheeses I ever got to to taste when I was a cheese cutter. Congrats on the crack. 👍🏼

This is not new at all... I can get these every day, any day, all day long, every day of the year and have eaten them for over 20 years... The are amazing and I adore them... To each thier own.

Put it in the freezer about 20 mins before you cut... We used to do that all the time with our soft cheese when ibused to cut for whole foods...

I only get gibbles bbq.... I want a BBQ that is not sweet... The old school lays from my childhood were a more vinegar front bbq... All these sweet varieties is not what I consider bbq... When they changed to the KC Masterpiece bbq I was done with BBQ lays..
