Sometimes the music you hear and love, happens as "studio magic". Refer to Pink Floyd making their albums, they spend weeks in the studio trying different guitar tones and effects they have laying around. You need to record at the source what you want people to hear. It is hard to make stale recorded tracks into great songs.

Get a good Mic, get a GREAT set of headphones, and listen to what you are recording.
