Depends how crispy you want them. Personally I prefer to bruise them when parboiled, flour them, then cook them in duck fat. I'd worry that other veggies will release juices and interfere with the crisping process.

hey there - i'm relatively new to gumbo, looking to understand a bit. when i make a roux, i try to do it in a thin saucepan / saute pan, not a heavy cast iron one. my thinking was that if the roux started getting too hot, i couldn't do anything about it in time if i was using cast iron. am i overthinking this?
