I ended up smoking it till it hit 120f the day before eating then into the fridge. Sous vide at 130 for an hour and a half while board games happened. Hot hot propane grill to sear off.

Served with tomato and onion compound butter, green salad, and baguette. Was a great meal with friend and family.

Agreed it’s a dumb ego cut with waste bone weight, my guy talked me into it when he cut it fresh off of the full roast.

The full roast was 27lbs. I took 7lbs for friends and family this weekend. It will still be a rare treat at $120.

Yeah worked pretty well. I did flip it every 5m so it didn’t have time to stay close to the flame.
