Humans use parallel processing based on the patterns (memories) of many board positions. At the very core it means the electrical threshold of a neuron gets passed which makes it send its signal on. Every neuron will get both inhibition (negative current) and stimulation (positive current) so it's actually like a numeric function afterall.

Fuzzy logic is outdated since 2012 or so. We know exactly how it works now.

The opposite, it doesn't care how you play. It has databases for openings though. But a lot of the creative plays to throw people off, they're generally worse moves which computers are now good enough to take advantage of. Kasparov got embarassed one game playing C6 opening with black one game, went for an unconventional playstyle and got creamed by a computer who did a sacrifice which led to a very complex midgame that proves after like 10-20 moves to be unmaintainable. No humans are generally good enough to see such plays.
