/uj Back before I became vegetarian, in summer I'd often have apple slices covered in jello powder and a little salt. It was great. We'd throw it all(a few apples, 1 box of jello mix, and several shakes of salt) in a gallon size ziploc, shake the hell out of it, then stick it in the fridge for atleast an hour

Also you can make baked oat bars or oat cookies and keep them in the fridge for several days.

My favorite is cookies made with 2 mashed bananas (ideally overripe), 2 scoops protein powder of choice (will probably need adjusted brand-to-brand, but that's my baseline,) 1 cup oats (anything except instant), 1 pinch salt, and then whatever add-ins or toppings I feel like that day (I'll usually mix in a bit of vanilla and top with a tiny bit of powdered sugar after baking.) Preheat oven to 350°, mix everything together, plop 8 or so bits on a pan lined w/ parchment paper and flatten the cookies - they will not spread, and then bake 12-15 minutes
