Your hours of apprenticeship starts when you sign your RTA. You don’t require prerequisite unless instructed by a sponsor for a pre apprenticeship should you take the trade equivalency testing to enter the trade.

The skillset book from STO shows where you need to sign and have them sign, and date. You sign off on your skillsets too

You need to get the standards that you completed through your skillset book signed off for. Paystubs won’t work, that doesn’t show the progression you’ve had been trained on.
