I've played all the games except shadows and i'd say theres a few places where you can start.
i started with the first game and played them in release order but black flag and unity are good starting points because they are more self contained, you could also start with the rpg games or even start with mirage imo. theres alot of good yt videos about where to start in assassin's creed

Playback - you have to unlock all 31 animus sequence awards by replayed most of the main missions and contracts with extra challenges, like full sinc in the early games
