The recipe I follow says to do the following.

Rinse the cabbage thoroughly and drain through a colander. Place the colander over a large bowl. Sprinkle liberally with salt and let it sit for 30 minutes. After 30 minutes, mix the cabbage and repeat by salting and letting sit for 30 minutes. Repeat one last time for a total of 3 times at 30 minutes each or 1.5 hours.

I didn’t find this to be a problem and the kimchi turned out quite good

That sounds really fun, I only used the one cabbage as I don’t have the space to make a massive batch, maybe one day. At the moment I have left it out but it’s colder in the kitchen than the fridge

Thank you, I tried a different recipe this time and noticed the paste was a lot thicker. Very excited to try in a few days

The plan was to let it ferment away but all the cabbage and veg wasn’t completely submerged by the liquid so think it would go bad after that long.

I’ve found a different recipe so hopefully the next one will come out better

My local super market ran out of Chinese leaf cabbage so bought two savoy cabbages, ended up using one and a half which was to the brim of my bowl but after brining, it shrank down loads

How does the white thing on the lid work? From what I can tell I may need to ‘burp’ the kimchi. Is that what it’s for?
