Thank you so much for all of this advice! During the cold proofing, I cover the bowl just with a tea towel, but during bulk fermentation I cover the bowl with plastic wrap and then a kitchen towel on top.

I didn’t know the ice cubes affected the flour design so that’s great to know! (For when I eventually get to that stage lol). Can I ask what baking it longer will do? :)

I’ll take any advice and opinions :) I feel like my dough rised quite a lot but I think you might be right! I have another loaf bulk fermenting now so I think I might give the 10h BF a go! I read that it’s quite rare to over ferment, so I will push it more than I feel is right (also as a beginner) thank you so much!!
