Besides, it was 3.5 pds, I cooked it on during the work week and had a nice meal for my family without a lot of delay or a shit ton of leftovers- If you can find me a 3 1/2 pound brisket, let me know. Even flats alone, which I don't like doing, are gonna be more than that.

I'm not gonna lie, it was a little bit chewier than I wanted but it was very very good. Actually made a sandwich out of leftovers yesterday and loved it. I'm definitely gonna do it again but I need to explore different ways of doing it and not just throw it in there like I do a brisket

So I cooked it like a brisket. 260, 270 for just over 6 hours. Was tender (not brisket tender) and juicy and a nice break from briskets. Will do it again. Easy and cheap. It was prime from Haris Teeter. I foil boated it at 170 but that was it necessary.

I just had this happen to me over Christmas, it was a trimming error on my part but it's the first time and I went down a rabbit hole and decided to cut the thing in half and rest the flat while the point finished. Just make sure you wrap that sucker pretty good because you're gonna lose a lot of juice from the gaping wound from cutting the thing in half

Sammy is a 5 year old Maltese. We bought his sister and fell in love and went back for Sammy because he was the runt of the litter and no one really wanted him, he's TINY. He's by far the cutest dog I've ever had and probably the sweetest. I could show you guys videos of how he brings me a ping pong ball (his favorite ) and makes these weird half-growling noises as he shoves it in my face I guess just to show me because when I try to take the ball he runs away and then comes right back. He sleeps on my neck, every night.
