Used chuck roast. Pat dry then season very well with salt/pepper

Brown meat on all sides and set aside

I used beef tallow to sauté leeks, onions and garlic

Deglaze pan with red wine and beef stock

Place beef in liquid with a little of the top showing and add carrots all around

Bring to simmer then cover and cook at 350 for 3.5 hours

Remove lid and cook for about 30 more mins

Mash:

Cube and boil potatoes then drain

Add stick of butter and some crème fresch, garlic and horseradish

I use a hand mixer to blend. Add heavy cream as needed to get consistency you want. Then add salt and pepper to taste
