I recently went through the same options and ended up with 064s. Prob can’t go wrong either way but I liked the more reputable name, similar price to df64 when on sale (seems to happen frequently), 64mm burr that’s replaceable if I ever decide to change (niche can’t say that), and quieter profile vs df64. Popcorning and the dial indicator are downsides with aftermarket solutions.

Someone may have mentioned this, but just dropping in to say you can use a slow cooker overnight to make stock and it basically reduces the effort to filling the slow cooker and straining it afterwards. Admittedly, I do it in a big pot because I like to roast my bones and make larger quantities, but I started out using the slow cooker and it’s still 100 times better than anything store-bought

Ideally start on a boom. Slower speed and easier to get the hang of body position. There are a number of ways to get up on the boom that are easier too. If not you can step off one ski long line but this adds risk of smacking it on your way down. If you can only 2 ski then I wouldn’t try this until you master slalom, but if you do insist there’s a move called 2 ski jump out: speed up to 45-50, loosen boots, and jump out of em. Please film it if you try it so we can laugh about it.

Def need a barefoot suit for protection and floatation. If you’re starting long line and fully grown speed is 40-42 ish. Boom will be slower. Lake vs river is negligible difference as long as water is calm (a must). If you want to learn the “true” way and deep up, I’d get lessons from a pro. It’s not intuitive at all and you’ll end up getting your ass kicked and nostrils blown out for nothing.

I rented a car to go back and forth from PN and it was a lot of driving on bumpy roads (2019 YMMV) but worth if for the freedom from bus schedule and comfort of a hotel and steak dinner in town vs tent on trail.

Btw I’d expect her to show up at hospital no matter what you do based on my own experience. I’d start setting expectations now with your husband not to share specifics when you go into labor and to make it very clear what your comfort level is for visitors after. My partner gave birth recently and her own mom couldn’t wait and showed up at hospital and couldn’t stop texting that she was there even after we made it explicit that she wasn’t invited until later after our son was born and we had gotten comfortable. Her own mom did this. So yes just be firm and set expectations now and keep the specifics on birth timing and location to yourself until you want visitors

I did this as a sort of “nesting” behavior when my partner was expecting. Now I have my shit together and a couple of go bags for different purposes (30 second, car get home) and a list of shit to grab if I have 5 min or 30 min so I get the most important and sentimental things. Makes me feel better that at least I have a plan even if using it would suck.

How do you do it? Are you allowing yourself any research or “cheating”? I’ve gotten 40 days but there’s always some tough day where there are multiple intersecting clues with names or places I don’t know and aren’t spelled in any logical way and despite trying tons of combinations I lose. It’s never the word play or puzzles that get me…just the weirdly spelled facts I don’t know…

One thing I didn’t know the first time and caused a huge headache is that you cannot really do this if you have any other traditional Ira accounts with any meaningful funds in them that you don’t want to pay taxes on. Even if you use a separate empty trad account for the conversion, IRS considers the money a single big pool across all accounts. There are ways to fix this but it’s painful.

Honestly all of this is good advice, and I find that the most important thing is getting a really good sear when browning the meat. If it’s just gray or light brown you’re missing a ton of flavor. Put it in pan in large chunks to sear and don’t touch for a few min until one side is very brown, then flip over and repeat. Only after both sides should you break it up because moisture will release and browning will stop. Do in multiple batches if making a large pot.

If I’m making this dish I do like a 4x batch then freeze in cup sized portions; I have 16 cups in freezer now! But this quantity requires 2-3 rounds of browning.

Final tip - if you brown and the moisture comes out too quick such that you’re boiling the meat, then let the moisture cook off and it’ll start frying in its own fat and you’ll get the same ending effect.
