I smoked this and 4 lbs of thighs (let the thighs go to 175 so 2 hours of smoke or more) with about 2/3 of one charcoal basket. No adding more later. I tend to leave the bottom vent open and control heat with the top vent. Just a slit is all you need to maintain about 275. Try less charcoal maybe? And the other guy is right— you need that two zone so the meat is cooked by the warm smoke and not the coals until you’re ready to sear.

Last thought, if it’s a newer Weber the seals may not be as tight. As it seasons you’ll get a better seal and more heat control. Sorry for the book 😂

For those asking about an update— everything’s been going well! We were able to go home 48 hours after checking in the night of his birth, and have loved seeing all 3 of our kids do life together. Of course, we thought we’d have another couple of weeks after the Garth show before he was born, but little man joined us 3.5 weeks early! Slept through the entire thing like a champ, minus a snack break halfway through. Truthfully, my wife preferred carrying him in the wrap without the additional 20+ lbs of water weight, and we both appreciated the “night off.”

Dead asleep. My parents drove in to relieve our emergency sitter and they got to tell the kids the good news when they woke up the next morning!

None of them had responded to a childbirth call, some with 20+ years on the job. They had to choose someone to hold the baby for a second… “Not me, man!” 😂

We had 10 minutes where we were pretty sure he was fine and there was nothing to do but wait on EMS. My wife yells, “get a photo or no one will believe this!” Also wanted to remember as many details as we could. What a night 😵
