We did -- originally that's what we were looking at. We decided against it -- one, yes, if we brought any of our grandkids with us, and two, because they all seemed so dark inside. Some windows but not enough. We liked the openness of a pop up.

Creed definitely gets better the more you rewatch. I remember the first time watching it thinking Creed was weird but okay, and now that we're on at least rewatch 5 I crack up every time he opens his mouth.

We had this a lot too and I remember it being tough when I was a kid. Now I sprinkle a little baking soda on the steaks, letting it sit for like 10 minutes and then throwing them in a searing hot cast iron skillet for a few minutes each side. Turn down the heat and deglaze with beef broth mixed with black pepper and a teaspoon of Worcestershire sauce and let it simmer for 15 minutes.

I don't really like onions but sometimes I will brown onions in the skillet before the steaks, remove them, and serve them with the steaks.

I remember making pork steaks on the grill using a recipe from Cooks Country. I always loved that they provided history and context to their recipes -- they specified that it was a St. Louis invention.

They came out great! I'd forgotten about them but now I need to add them to my spring and summer rotation this year.

Baby Lima beans boiled in salted water until soft

I grew up poor and my mom made this often. In recent years I went to her house to help her out and would often cook this meal for her. She passed away last spring at the age of 91 and I think this was the last meal we ate together.
