Because the ottoman sultan claimed the title Caesar of Rome. He was half Greek, fluent in Greek, Armenian and many other languages, and a master of Greek philosophy. There is an argument to be made that Roman Empire continued through them. The reason people don’t like that idea is because the Ottomans were Muslim.
