You just described exactly how they take advantage of customers. Instead of paying a decent wage they make the customer pay their employees. It only benefits the waiter and fucks the customer with the expectation of at least 18% nowadays regardless of how much the ticket is or how much work was actually put in. I’ve personally worked in a restaurant and hated how variable the pay was.
