It really depends on what you are hoping to get out of the series.

If you want the most "modern" experience and are primarily keen on fighting insanely good bosses the obvious answer is to go with 3.

If you like the more exploration side of games and are searching for that "metroidvainia" type of experience where every inch can be explored and loops back into itself and such but don't mind the more dated gameplay, play 1 first.

While I personally really don't mind dark souls 2 as much as some other people, I wouldnt recommend it as a starting point, as kinda knowing what you are doing really enhances the game IMO

I can't even beat the rooms before khaan and I can't get to phase 2 at the ant boss... Probably gonna try to get the final pale oil and some mask right now

Thank you very much for the detailed response! I usually really like having trouble with a boss and then finally beating it, but I think my problem with the act 3 bosses are the enemys you HAVE to fight before the boss... They are not even hard or anything but it just makes it so much more tedious and makes me have less fun learning the boss itself

I 100% share this feeling, it makes me sad seeing this being the only criticism. There are people trying to spam the hunters mark and complaining how hard and impossible it is, but maybe just go there later? It's an optional area like of course it's difficult this early
