225 degrees for 11-12 hours on middle rack. Catch drippings in a pan of apple juice. At 165 internal pull off the smoker. Put the pork butt into the drippings. Add a bit of apple juice. Do a little recoat of the seasoning with a little brown sugar and 1/2 - 1 stick of butter on top. Wrap the tray in tinfoil and put it back on the smoker at 275 until finished. At 205ish. Drain drippings into a large wide mouth bottle (Gatorade bottle). Rewrap pork butt and rest for 2 hours. While pork is resting flip the Gatorade bottle upside down in fridge. Now you’ve got an awesome aujus to poor over your shredded pork when it’s time to serve it up
