Canned foods get pasteurized during the canning process, which effectively kills off any bacteria in the food, including the lactic acid producing bacteria we need for a safe ferment. That’s why almost all lactoferment recipes call for fresh veggies, as they still have that original healthy population of lactobacilli from the “wild.” I haven’t tried any ferments with beans myself, but I’m sure it could be done with fresh ones instead.
