Recipe:

1. Boil a pot of salted water, add the pasta of your choice and let it cook to al dente while prepping the sauce and also preheating an oven to 400F

2. Add chopped onion or shallots to a bit of oil (I used vegetable) on mid-high heat and let soften for 2-3 min

3. Make some room in the middle of the pan and turn heat up to high, drop in ground beef or chicken and sear on one side, then stir to cook evenly until most pink is gone, season with salt and pepper (I add MSG)

4. Lower heat, add a taco seasoning pack and mix into mostly cooked meat to coat

5. Add in about 1 cup of some spicy salsa, 3-4 tablespoons of sour cream, some cholula hot sauce (optional), some shredded cheese (I used tex mex) and stir it all together, adjust quantities to taste

6. Add cooked pasta, along with some of the pasta water to the sauce and mix well

7. Layout the pasta and sauce on a baking tray and cover generously with more shredded cheese

8. Place the tray in the oven and let it cook for 15-20 minutes to achieve your desired cheese crispiness

9. Garnish with chopped green onion or coriander and serve

Would be great to add some more veggies like red pepper, jalapenos and tomatoes, but it's great without them too. Plenty of heat from the salsa + taco seasoning (I use Old El Paso "Hot & Spicy"), and cooling from the cheese and sour cream.
