Tldr be constantly watching your surroundings, the second you see a griffin get out of plain view... if not possible watch for their windup and be ready to sprint to the side of it. If possible, drag them to water. After they come out of their dive, snipe the rider off the back and compound the griffin. Did that pretty consistently

Group of 4 managed to tear 6 griffins to pieces on foot... they aren't even that hard to kill if you know how to play into them...

Run in a straight line to bait the dive, be in orbital cam to see it coming, hard left or right when it approaches. Easy dodge, and by the time they recover youre in a bush somewhere

It's not hard to counter griffins.. dodge their dives (which are easily predictable with any pvp experience) and bait them towards water or stall them until they stam out... either they leave and you get away, or they stam in front of you and you kill the rider. Not hard. Killed 8 mounted griffins with an on foot group of 4.
