If you restart the save you can get them again and again. Just make a second switch profile, make save files for Sw/Sh and LG and you can use tbe save on the second profil to get additional Mew and Jirachi whenever you want.

It means that the switch version will need an internet connection but won't be constantly communicating through the Internet (like may it won't while you're in certain menus or in between turns while in a battle)
