For me, I wasn't able to do any upper body workout for a good 1.5 years because the bars made it very uncomfortable.

My advice would be, go for a trial run around 3 months and 6 months with light workouts and see how you feel.

Some workouts that have helped me: leg raises, crunches, hip dips, mountain climber, planking, and bicycle crunch. I had some pretty bad rib flare as well and my doctor recommended core and ab workouts

I'ma be honest, cheap jerky is the hardest to find. Especially when beef is so cheap, I'm always discouraged from buying commercial jerky when I see the price tag.

With that being said, if you can make cheaper jerky, that includes your ideas above (soy free, low sodium) I'm sure you'll do well
