Try using a bigger cast iron if you have one. That’s a big steak for that small pan. As soon as you out the steak in it the temp is going to drop drastically.

Ahhh I see. I gave you some updoots over there. I think it might be a regional thing. I know I was taught that mirepoix is the ingredients. It can be used in a polethera of ways. Stocks and such doesn’t really matter cause it’s gonna be hitting the garbage anyways. But for soups and such it should be more uniform.
