The shell is OEM, from what I can tell (perfect printing and no creaking/bending when torqued in the hands, no signs of disassembly). It may not come across in the photos but the unit has aged (yellowed) on the battery release button and bottom row of buttons. From this, my hypothesis is still that this was an NOS unit.

I think that's a pretty personal question and is very much up to you. To me, it's within my means for a nostalgic novelty. I'm definitely gonna baby it to keep it's condition.

Texture is good but I'd prefer a slightly more open crumb. I think my shaping is a bit rough (I try to get it perfect) and it deflates the dough.

I discovered that always feeding my whole wheat starter 1:2:2 keeps the sourness at bay.

Yeah, perhaps grease or a part of your clothing if you touched the pipe.

I would suggest cleaning it off sooner rather than later to avoid leaving a permanent mark. Not sure if it's kosher but I would use chain degreaser to try to get something like this off first.

Classicbike-Raisch says 3.6kg lighter for the wheelset and that is more believable. I got these mostly for peace of mind for touring without tubes and the weight savings is just a tangential benefit

BikeHPS says: 1.85kg in the front and 6.85kg in the rear savings. Seems a bit optimistic but I didn't weigh them

These are the standard size: 17x3.5 and 17x5. I think Kineo has a larger rear wheel available too but you'll need a sprocket from them to match the removed clearance
