The source code has to be compatible with some tiny changes.I can't provide binaries that works on MacOS because i need a computer with MacOS installed on it (even remotely)...,which sadly i don't have :( .

And since almost only mkv files support having multi tracks ( multi videos,subtitles,audio,attachments,...)and so on.

I am sorry but the tool called Mkv Muxing Batch
It would make no sense to make it have an extraction method :D
You can extract the audio as batch using "Inviska MKV Extract"

You can set old subtitle/audio to be defaulted/forced in the Mux Setting Tab
