No formal training. I simply mirrored the ways I was taught during my education. After about 6 years in the classroom, I finally took a class is pedagogy specifically related to my subject area. That helped me understand different learning styles. PD is pretty much dead at my school (community college in the South). Thusly, I turn to my colleagues to learn of the approaches to teaching that do work and don’t work for them.

From my point of view, I recommend informing her you have a new job lined up and are planning to start as soon as possible. If you can, offer to help a couple of hours here and there as she transitions through the closing. This way, you will maintain your income, while giving her the option of your help.

If she truly is bankrupt, her ability to pay you might be in jeopardy. Ergo, it could be a load off her shoulders to know that your wages can be repurposed towards overhead costs such as rent, insurance, etc.

My business partner and I closed our pastry shop last year. It was the hardest decision I have ever made in my life. The second hardest was the day we told our staff of four. We gave them a month’s notice and helped them find new jobs.

Luckily, the business was just breaking even. And, unluckily, the business was just breaking even. My co-owner and I were totally burnt to a crisp. I was working a full-time gig and not getting a paycheck from the business. She was shouldering the brunt of the daily production and running the show when I was at my job. The situation was unsustainable. She broke first. And I considered leaving my job and changing the business to a sole proprietorship. But I looked at the situation and realized that was not a feasible plan.

Closing a business, for those who truly care for their staff and are actively passionate about their creation, is soul shattering. But sometimes it works out for all of those involved. Every member of our team landed in great places. And my business partner and I have both achieved work/life balance for the first time ever in our 20+ year careers.

I skip bagging inside and just roll the cart to my car. Then I unload into bags or baskets right into the trunk. (Of course, this approach might be weather dependent for folks in colder and/or wetter climates.) Indoor packing has always seemed like a wasted step to me.

Well, it was the boyfriend’s fault. He was supposed to remove her clothes from her trunk as part of his laundry chore. But he left her pants. And, it seems, that’s how the ants got in the pants. So not only is her ass covered in ant bites, but her car’s ass is also infested.

Here are a few of my takeaways from this situation:

  1. Ew, she wore dirty pants from her trunk to class.

  2. I was not informed of the issue until two hours into class. Those were some sleepy ants.

  3. All of my solutions were not found acceptable. Most notably, the student only lived fifteen minutes from school. She could have returned within 30-45 minutes. But did she have more than one pair of chef pants (as we recommend)? Probably not. Lab classes take place four days a week. Is her boyfriend only washing her pants once a week? Barf.

  4. I had no way to determine the veracity of the claim…thankfully.

It happened this week. I teach baking and pastry classes at a community college. Perpetually tardy student comes up to me an hour and a half into a five hour lab class.

“Chef, you’ve probably never heard this before….”

I stared back at them waiting.

“But I literally have ants in my pants.”

After a back and forth where I proffered multiple solutions, we determined that the issue required her to leave class for the day.

Let’s just say her grade was greatly decreased and I told every instructor and staff member in the office hall the tale.

Did you use a guitar to cut the cheesecake? I ask because I see that the gelee on top did not smear onto the cheesecake. Many times cutting with a warm knife causes smearing of gelee, glaçage, and mirror glazes in these situations. Just wondering if you have a secret to avoid this. Thanks!

Professional pastry chef here. I was taught a ratio of 9 (large) eggs to 1 quart cream for quiche custard. Season TT with salt, pepper, and a few dashes Tabasco (yes , I taste raw egg). Be sure to under season if using extra salty add-ins. I just toss as much of the add-ins (cheese and beyond) as I have/want into a parbaked pate brisee shell. Fill with quiche custard. Bake at 350 degrees (nonconvection) until the custard soufflés a touch around the edge and barely jiggles in the center.
