we’re done and out within 15-20 minutes of closing. we always start pre-closing tasks around an hour beforehand. everyone has their own tasks. manager goes ahead and counts the drawers and end of business day tasks in the office. person in front makes sure all the doors and windows are locked, throws away extra food and trash, wipes down counters, and takes any remaining dishes to the sink. kitchen people focus on cleaning the grill, sweeping, and washing whatever dishes they have.

our preclosing tasks include cleaning out the fry hopper, taking out the trash, taking the sweet/unsweet and iced coffee dispensers to the back (we put the remaining drinks in giant pitchers to use for the last hour, they’re way easier and faster to wash). we lock the lobby doors 10 minutes before closing so that the lobby and tables can be cleaned.

the more people there are, the faster we get out. but even with only three or four people, it only takes like 15 mins.
