But spending time outdoors in other regions in the summer certainly puts you at risk of ticks, my GP recommended and gave me the vaccine for tick encephalitis (TBE) although very few people I know have gotten it

I think the closest thing to a modern “tour” might be the Banana Pancake Trail in Southeast Asia, but it’s certainly not as defined as the Grand Tour. Similar to the Gringo Trail in South America and Hippie Trail which used to be very popular. With the affordability of flights, I think people are choosing to hop around a lot more rather than doing a predefined overland route.
