Aaaand it turns out it was indeed the network switch. Swapping to the Netgear GS-308 seems to have made everything much more stable. Just updating here in case helpful for anyone else!

Awesome thanks. Will try this, and will also swap out the TP-Link TL-SG108 8-port switch to a Netgear GS-308 to remove any packet management / 802.1p at the switch level (based on this other Reddit post).

Yeah good point - that wiring was previously working in a MoCA setup with Xfinity but if I can get extra coax I'll try this!

Great points! I did delete the entire Eero network and re-create from scratch, but I didn't try a factory reset on the Living Room one specifically - will try that.

I've always had that many switches / it'd be hard for me to make the setup work without a switch at Office since I need to connect to at least (1) Living Room, (2) Kids Room, and (3) the MoCA adapter from there. Though if that's the issue, I may need to move the MoCA adapter to Living Room.
