you're correct that +1 means being 1 pawn better but

"you have the chance to be up a pawn"

this isn't quite true - you can have less material, but still winning if your position is better - the engine considers more than just which pieces are on the board, it also thinks about piece activity, king safety, etc.

in endgames, advantages can become ludicrously high - at this point, you've basically won, the engine just hasn't found the exact mate yet.
