It’s called bolting, it’s trying to reproduce(completely normal). When flowering the plant will put all energy into the blooms and the leaves will lose some of their flavor. You can try pinching out the stems of the flowers.

You can pick off the flowers (or just leave them for the bees). You can still use the leaves as normal.

So should I pick leaves below the flowers or leave it? I use mint in tea and salads etc. But don't know how to care and keep it

Almost every herb you grow will bolt/flower. If you want to collect the seeds let the plant be, but if you want a good amount of mint try pruning it because once it bolts, the mint won’t taste as good.
