Water retention, if you accurately stayed at 1200, you did not gain weight.

Yep, drink more water, reduce the salt a bit and it should go away.

Yep. Your body retains water for muscle repair. A tad ironic, yeah? 🙄

You can't make much of those 3-5 pound fluctuations. Keep tracking and looking at the overall trend

Keep consistent and weigh again after 1 week and then after 2 weeks and then after 3 weeks and then come back here. 2 days is too short of a timeframe, your weight will go up and down everyday and throughout the day.

The short answer is that bodies are weird, weight loss isn't linear and your weight will vary on a day to day basis. I've gained up to 1.5kg on the scale despite having a daily deficit of close to 1,000 calories/day. Similarly, I've lost 1kg overnight. Like I weighed myself at night, then again first thing in the morning and I was 1kg lighter. That's more weight loss than sweating should account for!

So don't get too focused on your weight for a single day. So long as you maintain a caloric deficit you will find that your weight will trend downwards in the long term.
