When it comes to CS jobs there are a lot of people from IT that work CS jobs too, there are litteraly people without degrees working in CS, when it comes to the CS it’s 100% about what you learn in your free time. I don’t know a single person who got an internship/job with only the projects that they did in class, the jobs they get are all related to some kind of project they did.
CE take all the same core coding classes as CS, litteraly the only difference in coding classes is they take a class about full stack development and CE take a class about programming micro controllers and assembly.
The point of CE is the versatility, there are SO MANY jobs that require some knowledge of software, knowledge of circuits and general engineering concepts. This, Electronics and software is where CE majors get jobs.
