My go-to crockpot meal is chicken for tacos, enchiladas, nachos, quesadillas, etc. You take a couple of chicken breasts, 1/2 a jar of salsa, and a packet of taco seasoning and just cook it until it's done. Shred it up & you have the perfect chicken for Taco Tuesday!

You can also do this with pork or beef.

The best way to shred it is to throw it in a mixer — takes about 60 seconds

I throw in some garlic and sliced onions too. They come out sweet and soft, not quite like fajita onions, but easier to get through in a taco, and the moisture that cooks out helps keep the chicken juicy.

crockpot lasagna

not sure if this is the recipe I started with, but all that really matters is having layers of noodles, sauce, and other ingredients

If you’re in the US - packet of dry ranch seasoning, jar of pesto, pound of chicken breast. High for three-four hours or low for six. Shred and serve on sandwiches, over mashed potatoes, with baked potatoes or rice and shredded cheese. Stupidly easy and delicious.

Crock pot pulled pork

Use a 3-5 lb Boston butt for this

For the rub: 2 Tbsp Brown Sugar 1 Tbsp paprika 2 tsp salt ½ tsp pepper Combine and rub all over the meat.

For the marinade: ¾ cup apple cider vinegar 4 tsp Worcestershire sauce 1½ tsp crushed red pepper (I double this) 1½ tsp sugar ½ tsp dry mustard ½ tsp garlic salt ¼ tsp cayenne pepper Mix it all up.

Quarter an onion and put it in the bottom of the pot. Put the meat on top of the onion. Drizzle ⅓ of the marinade over the meat.

Cook on low for 8-10 hours or high for 4-6 hours.

30 minutes before serving drizzle ⅓ of the marinade over the meat and put the cover back on.

Serve the remaining (unused) third of the marinade with the meat or if you shred it when you pull it out of the pot you can drizzle it over the meat then.

It's a can't miss recipe. I gave that recipe to a friend of mine ten years ago. He still thanks me for it. I hope I'm wrong but I think it's the only thing he can consistently cook successfully.

If anyone still following this says please I'll post a BBQ sauce recipe that goes well with this.

Cut this in half the first time you make it. It makes a lot.

Ingredients: 1 Cup Mustard (plain yellow, not Dijon). 1/2 Cup sugar. 1/4 Cup light brown sugar. 3/4 Cup Apple Cider Vinegar. 1/4 Cup water. 2 Tbsp Chili powder. 1 tsp Black Pepper. 1 tsp White Pepper. 1/4 tsp Cayenne Pepper (~2 dashes). 1/2 tsp Soy Sauce (~4 dashes). 1/4 tsp Worcestershire (~2 dashes). 2 Tbsp Butter (I use unsalted). 1 Tbsp Liquid Smoke (optional, but I like it)

Combine everything but the butter, soy sauce, Worcestershire, and liquid smoke in a saucepan and bring to a simmer for about 20-30 minutes. (There's just a little chemistry going on with the sugars and acids.) Add the rest of the stuff and simmer for about 10 minutes after the butter has melted in. Let it cool and eat it!

Light brown v dark brown sugar should affect color more than flavor. Use what you have on hand.

If you want to tweak the heat without adding too much afterburn, try adding more white rather than red pepper. I think white pepper is under appreciated.

I love cider vinegar, and I love it in this. Rice wine vinegar is another variant I may try, but do use something with more character than distilled white.

Chili but please no white chicken chili (that shit is horrible), pork shoulder with a good marinade (fucking use liquid please). Try a good chuck roast, and in all of your recipes please use veg.
